Fall is finally here!

Being a Midwest girl at heart I still have trouble with the weather here in Louisiana!  Yesterday it finally felt like fall (after what seemed like 10 months of summer).  I know the leaves won't change color, but the feeling of cool, crisp air brings a smile to my face. I celebrated by making an apple crisp!  Yumm!

The recipe in case you are interested:
Apple Crisp

4 cups apples (peeled and sliced)
2/3-3/4 c packed brown sugar
1/2 c flour
1/2 c rolled oats
3/4 t cinnamon
3/4 t nutmeg
1/3 c soft butter

Place apples in greased 8in pan.  Blend remaining ingredients until crumbly.  Spread over apples.  Bake at 375 for 30-35 minutes until apples are tender.

So today I am wearing handknit socks (so is DH) and Knox (the cat) is using the cooler weather as an excuse to catch a few extra winks!

Happy Birthday to...

DH!!!!  Sunday night I made him a Dried Apricot Pie!  You cook the apricots on the stove first to soften them.  He loves it! (I don't like it, so it is all for him)  Early in our marriage we learned that I don't make good cakes (from a box, from scratch, they are all bad) but my pies....they are much better!

We plan to go out to dinner and just relax (maybe go to the new Borders'!)

This and That

  1. I have started the Lily of the Valley Border chart on my shawl! (yeah!)  I had hoped to be a little further along, but....had to do some school work and visit the pastor's new little baby, and special time with DH who came home early yesterday!  (definitely worth being a little behind)  There still should be no problem finishing in time, so no worries!
  2. Last night DH and I tried a new restaurant....standard Louisiana fare.  Our favorite such restaurant has been the Chimes (close to campus, affordable, and very yummy)  It was the first such restaurant we had been to and while we've sampled many it has still come out on top....until now.  Now we say they are tied...each has their strengths.  The new restaurant we heard about during a guest preacher's sermon a church (another reason to pay attention during church!)  It is called Kevin's Cajun Cafe'.  It is a little bit of a drive, but yummy!  I've never liked catfish before....now I'm getting hungry just thinking about it!
  3. Thanks for thinking about Knox....she was doing the same whining/looking at the ceiling thing to DH later that night, but is now back to normal....enjoying my lap while I'm knitting.
